Chocolate Basque Cheesecake
In a saucepan, heat the cream with the sugar and melt the chocolate, avoiding boiling.
Remove from the heat and add the Quescrem Natural at room temperature
Mix with an electric mixer and add the eggs one at a time while whisking, trying to introduce as little air as possible.(1)
Finally add the cocoa and continue beating until you have a homogeneous dough.
Cover the baking pan with slightly moistened baking paper so that it does not burn.(2)
Bake at 200º for 20 minutes and raise the temperature to 270º and bake for 5 more minutes.
Allow to cool before serving.
