Creamy Cheese Brûlée
For the cream
For the caramelized
Boil the milk with the cinnamon stick and the lemon rind. Cover and leave to infuse for 10 minutes. Strain.
Mix the sugar and cornstarch and add the yolks. Stir until obtaining a homogeneous mixture and incorporate little by little the cream cheese.
Pour the hot milk over the previous mixture and put on a medium low heat until the mixture boils again
Pour over individual pans and leave to cool uncovered.
Once cold sprinkle the surface with sugar and burn with a torch or metal burner
