Lactose-free cheese and onion croquettes
In a saucepan add the oil and the flour and put on a medium heat without stopping stirring until the flour is lightly toasted. Then slowly add the hot milk, stirring constantly.
Once the milk has been incorporated and the mixture is homogeneous, add the salt, nutmeg and pepper. Bring to the boil and keep it boiling for half an hour over a low heat. Halfway through cooking add the caramelised onion.
Let the mixture cool down a little and add the 0% Lactose cream cheese. Place on a container and refrigerate for 4 hours.
After the 4 hours of rest, make croquettes with the help of two spoons, batter them in breadcrumbs, dip them in egg and batter them again.
Once the croquettes are formed, fry them with the oil at 175ºC until they are golden.
