Ingredients

For the cookie base:

400 g digestive cookies
200 g Creamed butter

For the cheesecake:

1000 g Regular Quescrem Cream Cheese
240 g of eggs
1 lemon
1 teaspoon vanilla
200 g Cream 35% fat
20 g corn flour
250 g sugar

For the presentation:

200 g red fruit jam

Tip:

This recipe, made with Regular Quescrem, has a creamy texture on the palate. It is also very stable when conserved and transported. For delivery, we recommend placing the portion on a flat, solid base and wrapping it in a cardboard box that fits the cake.

For the cookie base:

Crush the cookies and mix them together with the butter until a homogeneous dough is left. Spread it on 8 cm x 6 cm moulds and press it lightly until it becomes compact.

For the cheesecake:

Add the lemon juice to the cream, mix and set aside.

In a bowl or in the Kitchen-Aid with the shovel, beat the Regular Quescrem cream cheese without airing it. Once it is creamy, add the corn flour, the grated lemon rind and the vanilla, add the sugar and the cream. Continue mixing for a few more minutes and add the eggs one at a time.

Put the mixture into individual steel moulds (approx. 125 g).

Bake the cake in a dry oven at 160° for 20 minutes. Remove from the oven and leave on a wire rack until it is cold.

For the presentation:

Once cold, add the red fruit jam on top and keep in the fridge.
