For the cookie base:
Crush the cookies and mix them together with the butter until a homogeneous dough is left. Spread it on 8 cm x 6 cm moulds and press it lightly until it becomes compact.
For the cheesecake:
Add the lemon juice to the cream, mix and set aside.
In a bowl or in the Kitchen-Aid with the shovel, beat the Regular Quescrem cream cheese without airing it. Once it is creamy, add the corn flour, the grated lemon rind and the vanilla, add the sugar and the cream. Continue mixing for a few more minutes and add the eggs one at a time.
Put the mixture into individual steel moulds (approx. 125 g).
Bake the cake in a dry oven at 160° for 20 minutes. Remove from the oven and leave on a wire rack until it is cold.
For the presentation:
Once cold, add the red fruit jam on top and keep in the fridge.
