Cheese and caramelized onion croquettes Lactose free


Of the croquettes

46 g extra virgin olive oil
122 g flour
124 g lactose-free milk
525 g of Quescrem Lactose Free
300 g caramelized onion
6 g salt
2 g pepper
2 g nutmeg

From the breading

300 g bread crumbs
122 g egg


The dough must be well chilled for the croquettes to be perfect. This recipe can be used to make cheese croquettes with any of the Quescrem cream cheese varieties.


Croquette dough

In a saucepan, add the oil and flour and place over medium heat, stirring constantly until the flour is lightly toasted. Then very slowly add the hot milk, stirring constantly.

Once the milk is incorporated and the mixture is homogeneous, add the salt, nutmeg and pepper. Bring to a boil and keep boiling for half an hour over low heat. Halfway through cooking add the caramelized onion.

Let the mixture cool slightly and add Quescrem Lactose-Free Quescrem. Place in a container and refrigerate for 4 hours.


After the 4 hours of resting time, roll the croquettes with two spoons, coat in breadcrumbs, dip in egg and coat again in breadcrumbs.
Once the croquettes are formed, they are fried with oil at 175 ºC until golden brown.
