In a saucepan add the oil and flour and place over medium heat, stirring constantly until the flour is lightly toasted. Then very slowly add the hot milk, stirring constantly.
Once the milk is incorporated and the mixture is homogeneous, add the salt, nutmeg and pepper. Bring to a boil and keep boiling for half an hour over low heat. Halfway through cooking add the caramelized onion.
Let the mixture cool slightly and add the 0% Lactose Cream Cheese. Place in a container and refrigerate for 4 hours.
After the 4 hours of resting time, roll the croquettes with two spoons, coat in breadcrumbs, dip in egg and coat again in breadcrumbs.
Once the croquettes are formed, they are fried with oil at 175ºC until golden brown.
