Mascarpone Quescrem and Coffee Flan

Ingredients

Whole milk 150 g
Cream (35% G.M.) 150 g
Egg 375 g
Egg yolk 45 g
Sugar 212 g
Soluble coffee 15 g

PROCESS

  1. Heat the milk, cream and sugar and bring to a boil.
  2. Pour the mixture over the beaten eggs and mix well.
  3. Next, add the soluble coffee and the Mascarpone Quescrem.
  4. Pass through the blender and pour filling up to ¾ of the caramelized flan molds.
  5. Bake at 160º C in a bain-marie oven.
  6. Bake for 10-15 minutes for 150 gram molds.
  7. Remove from the oven and place in the refrigerator for 2 hours before unmolding.
