Ingredients
Mascarpone Quescrem 552 g
Whole milk 150 g
Cream (35% G.M.) 150 g
Egg 375 g
Egg yolk 45 g
Sugar 212 g
Soluble coffee 15 g
PROCESS
- Heat the milk, cream and sugar and bring to a boil.
- Pour the mixture over the beaten eggs and mix well.
- Next, add the soluble coffee and the Mascarpone Quescrem.
- Pass through the blender and pour filling up to ¾ of the caramelized flan molds.
- Bake at 160º C in a bain-marie oven.
- Bake for 10-15 minutes for 150 gram molds.
- Remove from the oven and place in the refrigerator for 2 hours before unmolding.
