New York Cheesecake


For the cheesecake

1.2 kg Quescrem Original cream cheese
225 g whipping cream
315 g sugar
65 g Corn starch
6 eggs


Use tempered ingredients and do not stir too vigorously to avoid incorporating too much air into the mixture.



When you have softened the cheese by moderate beating or tempering, add the whipping cream and sugar while continuing to beat at medium speed. The ingredients should be beaten long enough to mix everything well and there are no lumps. It is very important that no air is incorporated.
Dilute the starch with water and introduce it into the mixture little by little.
Finally add the eggs one by one, allowing time to mix properly. Beat all the mixture again with the curved hook of the mixer to de-aerate it before placing it in a baking pan.
Preheat the oven to 200 ºC and bake at that temperature for 15 minutes. After this time lower the temperature to 130 ºC and bake for 60 minutes.


Although the original American cheesecake is served naked, we propose to make it more attractive by serving it on a platter garnished with some red fruits such as blueberries, strawberries, raspberries and currants. At the moment of serving the portion you can accompany it with some jam, honey, caramel or syrup.
